KeymasterHappy New Year! Today starts a new beginning to be kind, caring, and forgiving. Even incarcerated people can change the world by being kind, caring, and forgiving. So, if you haven’t made any New Year’s resolutions to improve yourself, then just help one who is less fortunate than you, or volunteer at any charity, or take an hour or two and visit a Senors center or just make a meal for your neighbors. I guarantee it, that your life will change by doing one thing for someone else each month (other than you). I guarantee it! So, if you see a need, and you have the means to fulfill that need, then Niki it (just do it). Even if you made your New Year’s resolutions, I guarantee that your life will change for the better by helping someone else.
The nacho meal that I prepared for four of us on New Year’s Eve tasted great and it was filling. Not just the four of us had nachos, but the Mexican Nationals made the same for their people. Instead of beef, we used shredded pork, and because there was a lot of beans and chili, we added an extra one third bag of frito style corn chips, but it was still good and tasty. The shredded pork cost more, but it is 8.8 ounces package of meat. The company that makes the shredded pork is from Mexico too. The Habanero hot sauce from our Christmas list and the Louisiana hot sauce was the right heat and spice that brought out all the flavors from each layer of corn chips, refried beans, and cheese, then corn chips, chili, and cheese. Then more corn chips, pork, diced jalapeños, cheese, and dabs of Habanero hot. Then more chips, refried beans, cheese, anything extra that is left, and dabs of hot Louisiana hot sauce, than topped off with cream cheese. It’s not holy cow cream cheese, or crap cow cream cheese, but it’s called Painted Cow cream cheese. Our commissary has Philadelphia cream cheese as well, but it cost more, yet Painted Cow cream cheese taste good too.
So, may your New Year be one of kindness, compassion, and forgiveness. Be nice to each other. That’s it in a nutshell, is just be nice. Happy New Year’s!
